Many of them do come in the Loeb Classical Library, fairly easily
accessible. This of course includes Hellenistic literature in addition
to some church fathers-Plutarch, Josephus, Philo to name a three. Another
common one, though I've not seen a critical apparatus
to it, is a reprint of _The Apostolic Fathers_ by JB Lightfoot usually
available at places like CBD. Hope that gets you started.
