I don't like the saying "There are no bad students; only bad teachers." I
think it is a gross oversimplification.
It is true that there are many uninspiring teachers, but it is also true
that there are a lot of lazy students, too!
As far as Greek 101 dropouts goes, many students begin language study, not
realising how hard it is. In Australian high schools there are plenty of
students in junior years studying languages, but very few in higher grades.
The dropout rate is amazingly high.
Teachers can make try to make the work fun, but finally the student has to
realise that studying languages is hard work.
The real problem is student motivation. A few teachers are able to motivate
unmotivated students, but this is a very difficult task.
In my field of music, we lose a lot of students, too, both in individual
instrument study and in study of music history, theory, etc.
