Jim,
A good little book to get hold of is D.A. Carson's NT Commentary Survey. I
believe he adresses the depth to which individual commentaries handle
Greek.

I'd agree that you should probably go on a book-by-book basis, but as for
sets, I'd add the International Critical Commentary to the lot. It's older
(and pricey), but generally solid.
