If you are interested in this subject, I would recommend a book called
_Chiasmus in Antiquity: Structures, Analyses, Exegesis_, edited by John W.
Welch. The book has chapters on chiasmus in various literatures, such as
Sumero-Akkadian, Ugaritic, Hebrew narrative, Hebrew poetry, Aramaic
contracts and letters, and Talmudic-Aggadic narrative. And yes, there are
chapters on both New Testament and ancient Greek and Latin literature.
[If your particular interest is NT, you should also try to get the classic
study by Nils Lund, _Chiasmus in the New Testament_ (Chapel Hill).
Unfortunately, I believe this book has long been out of print; you might
try E-Bay.]
The Chiasmus in Antiquity volume has a good bibliography, but if you are
really interested in pursuing research in this area, there is a companion
volume by the same editor called _Chiasmus Bibliography_, which is a much
more extensive and up-to-date bibliography.
These books are available from Amazon.com, but with a 4-6 week wait. If
you want to order them more quickly, you can call 1-800-FARMS15. Both are
paperbacks; I think the first one is maybe $20, and the bibliography is
maybe $14.
